A CSV file `option_normalizer_YYYY-MM-DD.csv` with columns: `product_id`, `product_title`, `variant_id`, `sku`, `option_name`, `old_value`, `new_value`. Run with `dry_run: true` to see every option value that would change — you often discover more inconsistencies than expected. Normalize one `option_name` at a time (Size first, then Color) to keep the mapping manageable and reduce error risk.
